I recently visited Betsy Devine and Rachel Mark- the women behind the incomparable Salvatore Bklyn Ricotta. Their dense, lush ricotta is rich and lemony- not at all similiar to the Calabro ricotta I grew up with, which I still hold dear. Rachel and Betsy are rock star examples of women in food. Betsy and Rachel gave me a tour of their kitchen, showed me how they make their cheese, and ultimately shared with me a recipe for the cannoli they serve at the Brooklyn Flea April-November. More on my conversations with them later.
For now, this is their recipe for cannoli, the first in the Foodie Fatale web series, a collaboration with filmmaker Gwen Lis.

Salvatore Bklyn Cannoli Recipe ingredients:
- 16 ounces of Salvatore Bklyn ricotta
- One dark chocolate bar into small slivers, adding a heaping tablespoon to the ricotta
- One lemon
- One tablespoon sweet marsala wine
- Pinch of kosher salt
- One vanilla bean
- Half a cup of sugar
- Cannoli shells
- Powdered sugar
